Chicken Cordon Bleu Bread Bowls
Lemon Drenched Gingerbread Cake
The salad features roasted fall vegetables with a garlic thyme vinaigrette. Oysters that are only just cooked in a creamy leek sauce are served over toast points topped with bacon. The chicken is served in individual bread bowls with melted swiss cheese oozing down the sides and a shallot mustard sauce for dipping. We’ll make a delightful gingerbread cake and combine it with three forms of lemon.

Seared Scallops in a wine, mushroom sauce are a great beginning. The salty savory pork roast contrasts beautifully with the sweet tart compote, and the potato cake is so fabulous and has such great presentation your family will beg you to make it again. The easy on the cook parfaits are a nice sweet light ending to this wonderful holiday menu.

These huge delicious refreshing salads are the perfect entrees for warm summer evenings. The chicken salad is tangy and bright, and the toasty vessel is fantastic when eaten. The shrimp salad is basically a deconstructed spring roll, all the flavor, very low fat, and cool! We’ll mix it up replacing the tuna in a classic nicoise with palate friendly salmon. The sensational tart combines a press in crust with a lemony pastry cream and fresh berries.

We’re always open to new ways to enjoy summer cukes, combining them with mango and some Mexican type seasoning is a real winner. The hens will be spice rubbed then weighted on the grill (we’ll be cooking these outside) resulting in evenly cooked juicy meat. This succotash is a bit different featuring what’s fresh in the garden now, seasoned with fresh herbs and some cream to carry all the flavors. It’s always pleasant to end a meal with cappucino, we’ll make a cool creamy version with the flavors of the hot drink.

In addition to melding together the flavors of the filling and the meat roulades make a beautiful presentation when sliced. We’ll learn how to properly prepare the meat “wrappers” for a juicy tender outcome. The pea soup has bright fresh flavors and is served warm, not hot. Melons are at their best during the month of August so honeydew will star in this frozen dessert beverage.

Cooking Classes (see schedules below) - Winery kitchen cooking classes are scheduled regularly at First Colony Winery in the rolling hills of the Virginia Piedmont and at Sweely Estate Winery in beautiful Madison County. Each class is designed to offer expertise with a different menu and set of cooking secrets that will lead you towards ever-greater confidence in home entertainment. These intimate participation style classes culminate with sitting down to our delicious lunch or dinner, paired with the delightful offerings of the winery’s cellar. The camaraderie is effusive as we converse with the vintner while enjoying his and our creations. Gift certificates are always available.
Special Events with a Class Motif provide an opportunity for the creation of an active, entertaining, and memorable occasion to celebrate your special event. Wedding Events - let the girls get away to have some fun (what the heck, bring along the boys, they may not always admit it but they have fun cooking too!)
