You’ll definitely feel more comfortable working with phyllo dough after mastering this delicious pizza featuring fresh tomatoes and fresh mozzarella. The souffle can be made ahead up to a finishing step and should be enjoyed immediately upon coming out of the oven. Watermelon, mint, frosty...yum!

Moroccan Roast Vegetable Couscous
Pina Colada Cake
This flavorful soup is thick and creamy without the addition of cream. We’ll make a glaze of coffee, spices, and rum to slather over lamb chops before grilling then serve these delicious little beasts with a mildly sweet very savory couscous. The cake is a meritage of three forms of coconut, flaked, ground, and creamed. It is heavenly topped with the tangy pineapple icing.

Send your teens who like to bake! We’ll prepare some classic pastry goodies. Yeasty iced cinnamon rolls, puff pastry horns brimming with Bavarian cream, and fun strawberry cupcakes are tasty and not so difficult to make from scratch. The lemonade recipe will keep you from the canned powder forever!

A white chilled soup featuring cucumbers and yogurt is a perfect lead-in to the sage seasoned prosciutto wrapped chicken. A nice white wine pan sauce complements both the saltimbocca and the polenta cakes. Yes, we really are making 2 pies, there is just too much deliciousness coming onto the market this time of year for me to make up my mind!
Cooking Classes (see schedules below) - Winery kitchen cooking classes are scheduled regularly at First Colony Winery in the rolling hills of the Virginia Piedmont and at Sweely Estate Winery in beautiful Madison County. Each class is designed to offer expertise with a different menu and set of cooking secrets that will lead you towards ever-greater confidence in home entertainment. These intimate participation style classes culminate with sitting down to our delicious lunch or dinner, paired with the delightful offerings of the winery’s cellar. The camaraderie is effusive as we converse with the vintner while enjoying his and our creations. Gift certificates are always available.
Special Events with a Class Motif provide an opportunity for the creation of an active, entertaining, and memorable occasion to celebrate your special event. Wedding Events - let the girls get away to have some fun (what the heck, bring along the boys, they may not always admit it but they have fun cooking too!)
Corporate Team Building - seeing your coworkers (yes, the bosses are included!) wearing aprons and up to their elbows in culinary creation (followed with great food and wine indulgence) can’t help but to raise the morale!
